Tsoureki

Tsoureki is a traditional Greek sweet bread, also enjoyed in other countries in the Eastern Mediterranean and beyond. It is a brioche-like bread typically made with flour, sugar, butter, eggs, and yeast. What distinguishes Tsoureki from other sweet breads is the addition of mahlab (or mahlepi), a spice made from the ground pits of the St Lucie cherry, and mastic, a resin with a distinctive pine or cedar flavor. These ingredients give Tsoureki its characteristic aroma and flavor.

Tsoureki is often prepared and consumed during Easter, where it holds religious significance symbolizing the resurrection of Christ. The three braids of the loaf are said to represent the Holy Trinity. A red-dyed egg, symbolizing the blood of Christ and rebirth, is frequently baked into the center of the Tsoureki loaf. However, it is also enjoyed throughout the year as a treat or dessert.

Different variations of Tsoureki exist, with some recipes incorporating citrus zest (orange or lemon) for added flavor. The bread is typically glazed with an egg wash before baking, resulting in a shiny, golden-brown crust. Sesame seeds are often sprinkled on top for added texture and visual appeal.
