Shankarpali

Shankarpali (also spelled Shakarpara or Khurma) is a popular sweet snack originating from Maharashtra, India. It is commonly prepared during Diwali, the Hindu festival of lights, as well as other festive occasions. Shankarpali is made from a dough of maida (all-purpose flour), semolina (rava), sugar, ghee (clarified butter), and milk or water. Spices such as cardamom powder are sometimes added for flavor.

The dough is rolled out and cut into diamond or square shapes. These pieces are then deep-fried until golden brown and crispy. The sugar in the dough caramelizes during frying, contributing to the sweet flavor and characteristic light brown color.

There are variations in the recipe depending on regional preferences and individual tastes. Some recipes include poppy seeds or turmeric powder. A savory version of Shankarpali, using spices instead of sugar, also exists but is less common.

Shankarpali is a relatively long-lasting snack due to the deep-frying process and low moisture content. It is a traditional treat enjoyed by people of all ages and is often gifted or shared amongst family and friends during festivals.
