Saperavi

Saperavi is a dark-skinned, acidic, teinturier grape variety native to the Republic of Georgia, where it is one of the country's most important grapes. Its name roughly translates to "dye" or "paint" in Georgian, referring to the grape's intensely pigmented juice, which is rare among Vitis vinifera varieties.

Saperavi is known for its deep color, robust tannins, and high acidity, making it suitable for producing both dry and semi-sweet red wines, as well as rosé and fortified wines. It is often described as having flavors of dark fruits like blackberry and plum, along with hints of spice, licorice, and sometimes chocolate. It can also exhibit savory notes and a characteristic earthy quality.

The grape's resilience to extreme temperatures and its ability to retain acidity even in hot climates have contributed to its popularity. While primarily grown in Georgia, Saperavi is also cultivated in other wine regions around the world, including Eastern Europe (e.g., Ukraine, Moldova), Russia, and increasingly in New World regions like Australia and the United States.
