Espelette
Espelette is a commune in the Pyrénées-Atlantiques department in southwestern France, specifically in the Northern Basque Country. It is best known for the piment d'Espelette, a variety of chili pepper that holds an Appellation d'Origine Protégée (AOP) designation, similar to wine appellations.
The piment d'Espelette is a key ingredient in Basque cuisine and has gained international recognition for its distinctive flavor, which is fruity, slightly smoky, and moderately spicy. The peppers are traditionally dried and ground into a powder, but are also sold fresh, pickled, or as a purée.
