Wisent (vodka)

Wisent, also known as Żubrówka, is a flavored vodka distilled in Poland. It derives its distinctive character from bison grass (Hierochloe odorata), which is also known as sweet grass or vanilla grass. A single blade of bison grass is typically placed in each bottle.

Flavor and Aroma:

Żubrówka is characterized by a unique flavor profile that is both herbal and subtly sweet. It possesses notes of vanilla, almond, and coconut, imparted by the bison grass. The aroma is similarly complex and inviting.

Production:

The vodka base is generally made from rye. After distillation, the bison grass is steeped in the vodka, flavoring and coloring it. The specific process and duration of steeping may vary slightly between producers.

Cultural Significance:

Żubrówka is deeply ingrained in Polish culture and tradition. The bison grass, which grows primarily in the Białowieża Forest, a UNESCO World Heritage Site, is closely associated with the wild European bison (żubr in Polish), hence the name. It is considered a national spirit and is often enjoyed neat, chilled, or mixed in cocktails.

One of the most popular cocktails featuring Żubrówka is the "Szarlotka," a mix of Żubrówka and apple juice. Other common pairings include ginger ale, tonic water, and citrus juices.

While Żubrówka is the most well-known brand, other producers may offer bison grass-flavored vodkas under different names. The core characteristic, however, remains the presence of bison grass and its unique flavor profile.

Legality:

Due to regulations regarding the use of coumarin, a naturally occurring compound found in bison grass, Żubrówka was previously banned in the United States. However, reformulated versions with lower coumarin levels are now available for sale.
