Usolka

Usolka, also sometimes spelled Solianka (from Russian: солянка), is a thick, spicy and sour Russian soup. It is a popular dish in Russia, Ukraine, and other countries of the former Soviet Union. The base for all usolkas is usually a salty and sour brine, such as pickle brine, with added ingredients like meat, fish, or mushrooms.

Types and Ingredients:

Usolka comes in three main varieties, distinguished by the primary ingredient:

  • Meat Usolka (мясная солянка): This version includes various cooked meats, such as beef, pork, sausages, and ham. It often contains pickled cucumbers, olives, capers, tomatoes, and lemon.

Regardless of the type, usolka is typically prepared by cooking the base ingredients (meat, fish, or mushrooms) in broth. Pickled cucumbers are added for sourness, along with tomatoes or tomato paste. Olives and capers contribute to the salty and briny flavor. Lemon slices are usually added just before serving. Sour cream (smetana) and fresh herbs, such as dill or parsley, are often used as garnishes.
