Stovies
Stovies are a traditional Scottish dish, often described as a type of stew. They are typically made with potatoes, onions, and some form of meat, usually beef (often leftover from a Sunday roast), though corned beef or other meats may be used. The potatoes and onions are cooked slowly in a small amount of fat, traditionally beef dripping, until they break down and become very soft and creamy. The meat is added and cooked through.
The consistency of stovies varies depending on the recipe and personal preference; some are quite thick and dry, while others are more liquid. Seasoning is generally simple, consisting of salt and pepper, although some recipes may include other herbs or spices.
Stovies are considered a hearty and comforting dish, particularly popular during the colder months. They are often associated with home cooking and family traditions. While variations exist across different regions of Scotland, the fundamental ingredients and slow cooking method remain consistent. There are no fixed recipes, and variations are commonly passed down through families.
