Seitovka

Seitovka is a Czech term referring to a specific type of sparkling wine or šumivé víno. Specifically, it denotes a sparkling wine produced using the Charmat method (also known as the tank method or cuve close method). This method involves secondary fermentation taking place in large, closed stainless steel tanks rather than individual bottles, as is the case with traditional method sparkling wines like Champagne or Crémant.

The Charmat method is generally considered a more cost-effective and faster way to produce sparkling wine compared to the traditional method. It often results in wines with fruitier, fresher, and less yeasty characteristics.

While the term "sekt" is more broadly used to refer to sparkling wine in Czech (and other Slavic languages), "seitovka" specifically designates sparkling wine made with the Charmat method. The term is most often encountered in the Czech Republic. The name originates with a misspelling by Josef Seitl (1879-1945) of his name; he was one of the first producers of sparkling wine using this technique.
