Ghevar

Ghevar is a disc-shaped Rajasthani sweet traditionally prepared during the Teej festival, a Hindu festival celebrated by women. It is made primarily from maida (all-purpose flour), ghee (clarified butter), and milk, and is soaked in sugar syrup.

The batter is poured in a thin stream onto a hot, circular mold in ghee, creating a porous, honeycomb-like structure. Once cooked, the ghevar is removed and soaked in chashni (sugar syrup).

Different varieties of ghevar exist, including plain ghevar, malai ghevar (topped with a layer of malai or cream), and mawa ghevar (made with or topped with khoya or solidified milk). Garnishes may include slivered almonds, pistachios, saffron, and edible silver leaf (vark).

The preparation of ghevar requires specialized skill and equipment to achieve its characteristic texture and shape. It is a popular sweet in Rajasthan and neighboring regions, especially during festive occasions.
