Sheermal

Sheermal (also spelled Shirmal or Sheermaal) is a traditional slightly sweet flatbread originating from Persia and popular in the Indian subcontinent, particularly in Lucknow, Hyderabad, and Kashmir. It is made from maida (all-purpose flour), leavened with yeast, and traditionally flavored with saffron and sweetened with sugar or jaggery. The dough is often kneaded with milk, which contributes to its soft texture and subtle sweetness. After being baked in a tandoor or oven, sheermal has a slightly puffy, golden-brown crust. It is typically enjoyed as a side dish with meat curries, kebabs, or on its own.
