Madabeh

Madabeh (also commonly spelled Matbucha) is a cooked tomato and roasted pepper salad or dip, originating from North African cuisine, particularly Libyan and Moroccan. The name "Matbucha" comes from the Arabic word meaning "cooked" or "stewed."

It is typically made with tomatoes, roasted bell peppers (often red), garlic, olive oil, and chili peppers (fresh or dried) and/or paprika for heat. Some variations may include other ingredients such as onions or carrots. The vegetables are slow-cooked over low heat for an extended period, allowing the flavors to meld and deepen.
