Kẹo dừa

Kẹo dừa (Vietnamese for "coconut candy") is a traditional Vietnamese candy made primarily from coconut cream and sugar. It originated in the Bến Tre province, known for its abundant coconut groves, in Southern Vietnam.

Production:

The process typically involves extracting coconut cream from grated coconut flesh. This cream is then cooked with sugar (often malt sugar for added flavor and texture) over heat until it thickens into a pliable consistency. Other ingredients like peanuts, pandan leaves (for fragrance), or cocoa powder can be added to create different variations. Once cooked, the mixture is poured onto a flat surface to cool and solidify before being cut into small, rectangular or square pieces, and wrapped individually in edible rice paper (bánh tráng) to prevent sticking and preserve freshness.

Characteristics:

Kẹo dừa is characterized by its sweet, creamy, and distinctly coconut flavor. The texture can range from soft and chewy to slightly harder, depending on the cooking time and ingredients used. The edible rice paper wrapping adds a subtle layer of texture that dissolves in the mouth.

Variations:

Besides the classic coconut flavor, kẹo dừa comes in various flavors, including:

  • Đậu phộng (Peanut): With added roasted peanuts for a crunchy texture and nutty flavor.
  • Lá dứa (Pandan): Infused with pandan leaves for a fragrant aroma and subtle green color.
  • Cacao (Cocoa): Blended with cocoa powder for a chocolatey flavor.
  • Sầu riêng (Durian): Durian flavored candy, known for its strong and unique aroma.

Cultural Significance:

Kẹo dừa is a popular treat in Vietnam, often enjoyed as a snack, dessert, or given as a gift. It is particularly associated with Bến Tre province, where many workshops and factories produce and sell the candy, making it a significant part of the local economy and culture. Kẹo dừa is also a popular souvenir for tourists visiting Vietnam.
