Horilka

Horilka is a Ukrainian distilled alcoholic beverage, similar to vodka. The term can refer to any strong spirit (over 40% alcohol by volume) but is commonly used to describe a strong, clear spirit made from grain, although it can also be made from potatoes, honey, or other ingredients. Horilka is deeply ingrained in Ukrainian culture and tradition, often consumed at celebrations, gatherings, and during holidays.

The production process typically involves fermenting a mash of the chosen ingredient (e.g., wheat, rye, potatoes) and then distilling it. The resulting spirit can be bottled directly or flavored with various ingredients. Common flavorings include honey, chili peppers (resulting in horikhivka or pepper vodka), horseradish, herbs, and fruits.

While often compared to vodka, horilka possesses a distinct character and often has a stronger, more pronounced flavor profile. Different regions of Ukraine may have their own variations and recipes, adding to the diversity of horilka.

The word "horilka" itself is derived from the Ukrainian verb "hority," which means "to burn," reflecting the fiery nature of the spirit. It is often served chilled in small glasses or shot glasses and is considered an essential part of Ukrainian hospitality and traditions.
