Dabeli

Dabeli, also known as Kutchi Dabeli, is a popular street food originating from the Kutch region of Gujarat, India. It is essentially a spicy potato mixture served inside a pav (a small bread roll).

The filling is made with boiled potatoes mashed and cooked with a special dabeli masala, a blend of dried spices that gives the dish its distinctive flavour. Common ingredients in the masala include dried red chilies, coriander seeds, cumin seeds, cloves, cinnamon, black peppercorns, and asafoetida.

The dabeli is typically garnished with pomegranate seeds, roasted peanuts, sev (thin, crispy noodles made from chickpea flour), and chopped onions. Sweet chutney and garlic chutney are also commonly spread on the pav to add further layers of flavour. The pav is then toasted on a griddle with butter before serving.

Dabeli is widely available throughout India, particularly in Gujarat and Maharashtra. Variations exist, with some vendors adding ingredients like cheese or different types of chutney to cater to local tastes.
