Chartreuse (liqueur)

Chartreuse is a French herbal liqueur made by the Carthusian Monks since 1737 according to the instructions set out in a manuscript given to them in 1605. It is named after the Grande Chartreuse monastery, located in the Chartreuse Mountains north of Grenoble.

The liqueur is composed of distilled alcohol aged with 130 herbs, plants and flowers. It is produced in only two colors: Green Chartreuse (55% alcohol by volume) and Yellow Chartreuse (40% alcohol by volume).

Green Chartreuse, the stronger variety, derives its natural green color from the chlorophyll of the herbs. It has a very strong herbal taste and aroma.

Yellow Chartreuse, introduced in 1838, is sweeter and milder. It obtains its yellow color from saffron.

The exact recipe for Chartreuse is a closely guarded secret, known only to a few monks at any one time. The recipe is written down, and the manuscript is kept locked in a safe. The monks oversee the entire production process, from the selection of herbs to the distillation and aging.

Chartreuse is often consumed as a digestif or used in cocktails. It is notable for its ability to age in the bottle, improving in flavor over time. Vintage Chartreuse bottlings are highly sought after by collectors.

The liqueur's popularity has led to imitations, but the authentic Chartreuse remains uniquely produced by the Carthusian monks. The profits from the sale of Chartreuse are used to support the monastic order.
