Calzone
A calzone is an Italian oven-baked folded pizza, originating in Naples. It is made with leavened dough and is similar in shape to a turnover. Common fillings include ricotta, mozzarella, tomato, and meat; however, numerous regional variations exist. Unlike a closed pizza, a calzone is often, but not always, brushed with tomato sauce or olive oil after baking. The dough is typically shaped into a disc, filled with the desired ingredients, then folded in half and crimped along the edges to create a seal. Calzones can be baked or fried. Smaller versions are sometimes referred to as "calzoncelli" or "panzerotti".
