Sampława

Sampława is a traditional Polish dish, a type of head cheese or brawn. It is made from various parts of the pig's head, including the snout, ears, and skin, along with other meat scraps and offal. These ingredients are cooked until tender, then chopped or ground and mixed with seasonings like salt, pepper, garlic, marjoram, and sometimes other spices. The mixture is then typically placed in a mold or casing (traditionally the pig's stomach or a synthetic casing) and allowed to cool and set into a solid, sliceable loaf. Sampława is usually served cold as an appetizer or snack. Regional variations exist, with different recipes calling for slightly different ingredients and spice combinations. It is similar to other head cheese preparations found in various European culinary traditions.
