Ziborovka
Ziborovka is a type of flavored vodka originating in Russia and Poland. It is characterized by its distinctive flavor profile, derived from the infusion of bison grass (Hierochloe odorata), also known as sweet grass or vanilla grass. The grass imparts a subtle vanilla, almond, and hay-like aroma and flavor to the vodka, as well as a slightly greenish or yellowish hue.
Traditionally, a blade of bison grass is placed in each bottle of Ziborovka, serving as both a flavoring agent and a visual marker of authenticity. The presence of the grass, however, is not always necessary for a vodka to be labeled as Ziborovka; the essential characteristic is the flavor profile achieved through bison grass infusion.
The production of Ziborovka involves macerating or distilling the bison grass in alcohol, which is then blended with vodka and water to achieve the desired alcohol content and flavor intensity. Different producers may use varying methods and proportions of bison grass, resulting in subtle variations in the final product.
Ziborovka is often enjoyed neat, chilled, or on the rocks. Its unique flavor also makes it a versatile ingredient in cocktails, where it can add a complex and aromatic dimension. It pairs well with citrus fruits, apple juice, and other ingredients that complement its herbal and vanilla notes.
