Salice Salentino (wine)

Salice Salentino is a red Italian wine produced in the Salento peninsula of Apulia (Puglia), specifically around the town of Salice Salentino in the province of Lecce. It is typically made primarily from Negroamaro grapes, often with a small percentage of Malvasia Nera.

The wine is known for its deep ruby color, aromas of dark fruit (such as black cherry and plum), and earthy undertones. It often possesses a slightly bitter finish and moderate tannins. Salice Salentino generally benefits from a few years of aging, during which the tannins soften and the flavors become more complex.

Regulations require Salice Salentino to be made with at least 75% Negroamaro grapes. The remaining 25% can consist of Malvasia Nera and/or other non-aromatic red grapes authorized for the province. The Riserva designation indicates a wine with a higher minimum alcohol content and longer aging period, often displaying greater complexity and concentration.

Salice Salentino is frequently enjoyed with hearty Italian cuisine, such as pasta with meat sauce, grilled meats, and aged cheeses. Its versatility makes it a popular choice throughout Italy and beyond.
