Rickey (cocktail)

The Rickey is a highball cocktail typically made with gin or bourbon, lime juice, and carbonated water. It is served over ice and is known for being a refreshing and relatively low-sugar drink. The cocktail's origin is attributed to a bartender at Shoomaker's in Washington, D.C., sometime in the late 19th century, who created the drink at the request of Colonel Joe Rickey, a lobbyist. While the original Rickey was made with bourbon, the gin version eventually became more popular, especially during Prohibition.

The defining characteristic of a Rickey is its lack of added sugar or sweetener beyond what might be present in the base spirit. This distinguishes it from other sour cocktails and contributes to its dry, tart flavor profile. Variations exist, sometimes incorporating different types of citrus or flavored sparkling water, but the core elements of spirit, lime, and carbonation remain consistent to qualify as a Rickey.
