Ražnjići
Ražnjići are a type of kebab popular in the Balkans, particularly in Serbia, Croatia, Bosnia and Herzegovina, Montenegro, North Macedonia, and Slovenia. The name itself is derived from the word "ražanj," meaning "spit" or "skewer." Ražnjići typically consist of small cubes of meat, most commonly pork or lamb, but sometimes beef or chicken, threaded onto a skewer and grilled.
The meat is often marinated before grilling to enhance its flavor and tenderness. Common marinades include combinations of oil, garlic, paprika, pepper, and other spices.
Ražnjići are often served with various side dishes, such as ajvar (a roasted red pepper relish), urnebes (a spicy cheese spread), onions, bread, and other salads. They are a common street food item and a staple at celebrations and gatherings in the region. While recipes vary from region to region and family to family, the fundamental components of meat on a skewer, marinated and grilled, remain constant.
