Paul Fleming (restaurateur)
Paul Fleming is an American entrepreneur and restaurateur best known for co-founding P.F. Chang's China Bistro, a popular national chain of Asian-themed casual dining restaurants.
Fleming began his career in the restaurant industry with a focus on upscale dining. Prior to P.F. Chang's, he was involved in several other restaurant ventures. In 1993, he partnered with Philip Chiang to create P.F. Chang's China Bistro in Scottsdale, Arizona. Fleming recognized the potential of Chiang's family recipes and culinary expertise, combining them with a more approachable and vibrant dining atmosphere than traditional Chinese restaurants.
Fleming played a significant role in the expansion and success of P.F. Chang's. He helped establish the brand's identity and oversaw its growth into a national chain with hundreds of locations. While the restaurant's name implies direct involvement from Paul Fleming beyond co-founding, he sold his stake in the company in 1999.
Following his departure from P.F. Chang's, Fleming continued to be involved in the restaurant industry, developing new concepts and investments. He is also known for Fleming's Prime Steakhouse & Wine Bar, a high-end steakhouse chain which he founded.
