Java rice
Java rice is a Filipino fried rice dish originating from Chinese fried rice. It is characterized by its vibrant orange or yellow color, achieved through the addition of annatto (atsuete) oil or powder. Unlike plain fried rice, Java rice is typically seasoned with garlic, onions, and a distinct blend of spices, often including turmeric, ginger, and sometimes soy sauce or fish sauce.
The dish is commonly served as part of a tapsilog meal (tapa, sinangag, itlog – cured meat, fried rice, egg) or other Filipino breakfast combinations. Its flavor profile is savory and slightly sweet, contrasting well with the richer flavors of grilled or fried meats. While variations exist depending on regional preferences and available ingredients, the annatto coloring remains a defining feature of Java rice. It is a staple in many Filipino restaurants and homes.
