Game pie
Game pie is a traditional British savoury pie filled primarily with game meats, often encased in a hot water crust pastry. The filling typically consists of a mixture of wild meats such as venison, rabbit, pheasant, partridge, and pigeon. These meats are often marinated or cooked with stock, wine, and a variety of seasonings. Traditionally, a game pie is baked until golden brown and allowed to cool completely before being served cold. Gelatine or aspic jelly is often added to the filling before baking to help bind the ingredients and prevent the pie from drying out, creating a firmer texture when chilled. Game pies are often associated with the Christmas season and hunting season in the UK. Variations exist depending on regional traditions and the availability of game.
