Succade

Succade, also known as candied peel or candied citrus peel, refers to the peel of citrus fruits, most commonly citron, but also oranges, lemons, and limes, that has been preserved in sugar. The process involves repeatedly boiling the peel in increasingly concentrated sugar syrup, gradually replacing the natural water content of the peel with sugar. This results in a translucent, chewy confection with a sweet and sometimes slightly bitter taste.

Succade is typically used as a baking ingredient, adding flavor and texture to cakes, breads, and other desserts. It can also be eaten as a standalone sweet. It's a traditional component in some fruitcakes and Italian panettone. The visual appeal of the candied peel, especially when made from citron with its thick rind, contributes to the overall presentation of the finished product.

The preparation of succade is a relatively lengthy process, often spanning several days. Historically, it served as a method of preserving citrus peel for extended periods, especially in regions where fresh citrus fruits were not readily available year-round.
