Saltah
Saltah is a traditional Yemeni stew considered the national dish of Yemen. It is primarily eaten for lunch and is particularly popular in northern parts of the country.
The dish is mainly composed of a brown meat stew called maraq, fenugreek froth, and sahawiq (a sauce made with chili peppers, tomatoes, garlic, and herbs). Rice, potatoes, scrambled eggs, and vegetables are also common additions. Saltah is traditionally served in a scalding hot clay pot called a madara or hinnit, and eaten with Yemeni flatbread, often used to scoop up the stew.
Variations of Saltah exist throughout Yemen, reflecting regional preferences and available ingredients. The stew is a hearty and filling meal, providing sustenance and warmth, especially in the cooler highland regions.
