Onejiru

Onejiru (おねじる) is a Japanese culinary term that refers to a specific type of miso soup. Characterized by a thicker consistency compared to regular miso soup, Onejiru distinguishes itself through the inclusion of a wider variety of ingredients, typically consisting of root vegetables, mushrooms, konjac (konnyaku), and pork. The term "one" (尾根) implies a generous or large serving, reflecting the hearty and substantial nature of the soup.

Unlike standard miso soup, which often serves as a light accompaniment to a meal, Onejiru is considered a meal in itself, providing significant nutritional value and often being served as a main course, especially in colder months. The preparation method involves slowly simmering the ingredients in dashi broth before adding the miso paste, allowing the flavors to meld and the vegetables to soften. Regional variations exist, with ingredient choices reflecting local availability and culinary traditions. While pork is common, some versions may substitute it with chicken or beef. Others might be vegetarian, featuring tofu or other plant-based protein sources.
