Kukusan

Kukusan is a traditional Indonesian and Malaysian steamer, typically made of woven bamboo. It is used for steaming rice, dim sum, vegetables, and other foods. The kukusan is conical in shape, narrowing towards the bottom, which allows steam to circulate evenly around the food being cooked. It is typically placed over a pot of boiling water. The bottom of the kukusan often features small holes or a woven pattern that permits steam to rise.

Kukusan made of bamboo are lightweight, inexpensive, and easy to clean. They are considered to impart a subtle, pleasant aroma to the food steamed within. While bamboo is the most common material, kukusan can also be made of metal. Metal kukusan are typically more durable but do not offer the same aromatic qualities as bamboo.

The use of kukusan is a vital part of Southeast Asian culinary tradition, predating the widespread adoption of electric rice cookers and modern steaming appliances. It remains a popular and practical tool for home cooks and food vendors alike.
