Çokərə

Çökərə, also spelled Chokara, is a type of Azerbaijani sweet pastry. It is a small, crescent-shaped or rounded bun, traditionally filled with a mixture of ground nuts (typically walnuts, hazelnuts, or almonds), sugar, and spices, most commonly cardamom. Sometimes, saffron is also added to the filling for aroma and color. The dough is typically made from flour, butter or oil, eggs, and yeast or baking powder.

Çökərə is often prepared for special occasions, particularly during the Novruz holiday celebrations in Azerbaijan. It is typically served alongside other traditional sweets such as pakhlava and shekerbura. The process of making çökərə can be quite involved, requiring careful attention to detail in both the preparation of the dough and the filling. Different regions and families may have their own variations on the recipe, resulting in slight differences in taste and appearance.
