Xəsili
Xəsili, also spelled Khassili, is a traditional Azerbaijani dish, a type of chicken soup. It is characterized by its rich broth and the inclusion of chicken pieces, often shredded, along with noodles. The noodles used are typically thin and homemade, although commercially available varieties can also be used. The soup is commonly seasoned with saffron, which imparts a distinctive flavor and yellow color. Other common ingredients include onions and herbs like parsley or cilantro. Xəsili is considered a comforting and nourishing dish, often served during colder months or when someone is feeling unwell. Different regional variations exist, with some recipes adding other vegetables like carrots or potatoes.
