Pirozhki
Pirozhki (plural, singular is pirozhok) are baked or fried yeast-leavened buns or pastries with a variety of fillings. They are a popular food in Eastern European cuisines, including Russian, Ukrainian, Belarusian, and Polish cuisine.
Pirozhki can be sweet or savory. Common savory fillings include meat (beef, pork, or lamb), potatoes, mushrooms, cabbage, onions, and eggs. Sweet fillings often consist of fruit such as apples, cherries, or berries, as well as sweet cheese (tvorog). The fillings are typically cooked before being enclosed in the dough.
The dough is usually made with flour, yeast, milk or water, eggs, and butter or oil. It is allowed to rise before being shaped into individual buns, filled, and then either baked or deep-fried. The baking method results in a softer, bread-like texture, while frying yields a crispier exterior.
Pirozhki are often served as a snack, appetizer, or side dish, and can be enjoyed hot or cold. They are a common feature at family gatherings, holidays, and celebrations in the regions where they are popular.
