Pimiento

A pimiento (pronounced /pɪˈmɛntoʊ/), also known as a cherry pepper, is a variety of large, red, heart-shaped chili pepper (Capsicum annuum). The flesh is sweet, succulent, and aromatic with a low Scoville heat unit rating (typically 100-500 SHU), making it very mild.

Pimientos are commonly used to stuff olives. They are also used in processed foods like pimento cheese, sandwich spreads, and as a garnish. Whole or diced pimientos are often found in jars or cans. In some regions, they are a common ingredient in stews and other dishes, adding color and subtle flavor.

Commercially, the majority of pimientos are grown in Spain, particularly in the northwest, although they are cultivated in other regions as well. The peppers are harvested when fully ripe and bright red. Processing methods vary but often involve roasting, peeling, and canning or jarring the peppers in water or brine.
