Pomeau

Pomeau is a French aperitif, typically produced in the Cognac and Armagnac regions of France. It is made by blending fresh, unfermented grape juice (moût de raisin) with one-year-old eau-de-vie (Cognac or Armagnac). The addition of the eau-de-vie stops fermentation, preserves the natural sugars of the grape juice, and adds alcoholic strength.

The resulting mixture is then aged in oak barrels for a period of time, usually between 12 and 18 months, during which it develops its characteristic flavors. Pomeau typically has an alcoholic content of around 16-17% ABV.

The grape varieties used for Pomeau production are often the same as those used for Cognac or Armagnac, depending on the region. Common varieties include Ugni Blanc, Folle Blanche, and Colombard.

Pomeau is typically served chilled as an aperitif or digestif. Its flavor profile is generally sweet and fruity, with notes of prune, honey, and spice derived from the oak aging. It can also be used in cocktails or as a dessert wine. The product is regulated by appellation laws specific to each region (Cognac or Armagnac) that define its production methods and characteristics.
