Memela
A memela (sometimes spelled bemela) is a thick, oval-shaped corn masa base, typically topped with various ingredients, originating from the state of Oaxaca, Mexico. It is similar to a sope or huarache, but generally thicker and often made with a coarser ground corn.
Mamelas are traditionally cooked on a comal (a flat griddle) and can be topped with a variety of ingredients such as:
