Jolpan
Jolpan, also sometimes spelled Jol-paan, refers to a light meal or snack commonly eaten in Assam, a state in Northeast India. It is typically consumed in the morning or afternoon and often consists of various forms of rice, such as bora saul (sticky rice), kumol saul (soft rice), or chira (flattened rice), served with accompaniments like curd (yogurt), jaggery, milk, cream, or seasonal fruits. Different types of pitha (rice cakes) may also be part of Jolpan.
Jolpan is a significant part of Assamese culinary culture and is often served during festivals, special occasions, and family gatherings. Its preparation and ingredients can vary from household to household and region to region within Assam, reflecting local preferences and the availability of ingredients. The focus is on simple, often cold or lightly prepared dishes that are both filling and nutritious. The meal provides energy and sustenance for the day's activities.
