Axutla

The Axutla is a small, edible aquatic insect belonging to the Hemiptera order, specifically the Corixidae family (water boatmen). These insects are native to lakes and ponds in Mexico, particularly around the Valley of Mexico.

Axutla, along with related species such as ahuahutle (eggs of the same insects), have historically been important sources of protein for indigenous communities. Harvesting techniques vary but generally involve using nets to collect the insects from the water.

While once a common food source, the availability of Axutla has declined in recent years due to factors like pollution, habitat loss, and over-harvesting. Efforts are being made to promote sustainable harvesting and potentially aquaculture to preserve this traditional food source. The insect's flavor is often described as similar to shrimp or fish.
