History

Providence opened in June 2005 in the former Patina space on Melrose Avenue. Chef Michael Cimarusti, a graduate of the Culinary Institute of America, had previously worked at renowned establishments including Spago (under Wolfgang Puck), Le Cirque, and the three-Michelin-starred Arpège in Paris (under Alain Passard). The restaurant originally offered à la carte options alongside two tasting menus but has since evolved to serve a single tasting menu with a vegetarian alternative.

Cuisine and Philosophy

Providence is deeply committed to sustainable seafood. Chef Cimarusti sources only wild-caught, sustainable products—primarily from American waters—and treats ingredients with sophisticated technique and respect. The menu blends global inspiration with classic technique and a modern sensibility.

Design

The dining room was redesigned in 2023 by Bells + Whistles, featuring hand-blown glass "Sea Clouds," ombré walls in shades of blue, green, and sand, wave-ripple carpeting, walnut tables, and a hand-hewn walnut bar. The restaurant also maintains a rooftop garden with herbs, edible flowers, and Italian honeybee hives whose honey is used in post-dinner tea service.
