Food coloring

Food coloring, also spelled food colourant or food colour, refers to any substance added to foods, beverages, or cosmetics to alter or enhance their visual appearance. These substances can be derived from natural sources—such as plants, minerals, or microorganisms—or synthesized chemically.

Classification

  • Other jurisdictions – Countries such as Canada, Australia, and Japan maintain comparable approval processes, often referencing international scientific assessments.

Usage

Food colorings serve several purposes:

  • Restoring color lost during processing (e.g., blanching vegetables).
  • Enhancing visual appeal to meet consumer expectations (e.g., bright orange for snack foods).
  • Standardizing product appearance across batches.
  • Signaling flavor or product type (e.g., red for strawberry‑flavored items).

They are applied in a wide range of products, including confectionery, baked goods, dairy, beverages, processed meats, and snack foods.

Health considerations

Scientific reviews have identified no consistent adverse health effects from approved food colorings at permitted levels. However, isolated studies have examined potential links between certain synthetic dyes and hyperactivity in children, leading some regulatory bodies to require warning labels (e.g., the U.S. FDA’s “color additives may have an adverse effect on the activity level and attention of children” statement for specific dyes).

Manufacturing and stability

Food colorants are formulated to be water‑soluble, oil‑soluble, or in suspension, depending on the intended application. Stability can be affected by factors such as pH, temperature, light exposure, and interaction with other ingredients. Manufacturers may combine colorants with antioxidants or encapsulation techniques to improve shelf life.
