Berkswell Cheese

Berkswell Cheese is a distinctive artisanal hard cheese produced from unpasteurised ewe's milk in the village of Berkswell, Warwickshire, England. It is made by the Fletcher family at Ram Hall.

Characteristics:

  • Milk Source: Made exclusively from the milk of Friesland sheep raised on the farm.
  • Type: A semi-hard, unpasteurised ewe's milk cheese, often likened to a British Pecorino or a firm Caerphilly.
  • Appearance: Its most notable visual feature is its unique ridged, basket-weave rind, which results from the plastic moulds used during production. The paste inside is open-textured, pale cream to ivory in colour, and can be slightly crumbly yet firm.
  • Texture: Firm and slightly crumbly with small irregular "eyes" (holes).
  • Flavour Profile: Berkswell offers a complex and evolving flavour. It typically presents nutty, sweet, and savoury notes, often with hints of lanolin (from the sheep's milk), citrus, and a yeasty undertone. The flavour becomes more pronounced and piquant with age.
  • Aging: The cheese is usually aged for 4 to 6 months, allowing its complex flavours to develop.

Production: The cheesemaking process at Ram Hall follows traditional methods. After the ewe's milk is curdled with vegetarian rennet, the curds are cut, stirred, and then hand-pressed into the distinctive plastic basket moulds. These moulds give Berkswell its characteristic ridged rind. The cheeses are then brined and aged in temperature-controlled rooms, where they are regularly turned and cared for.

Recognition: Berkswell Cheese has garnered numerous accolades, including multiple awards at the British Cheese Awards and the World Cheese Awards, solidifying its reputation as a high-quality artisanal British cheese. It is highly regarded by cheesemongers and chefs alike.

Culinary Uses: Berkswell is a versatile cheese. Its firm texture and complex flavour make it excellent for grating over pasta dishes, salads, or risottos, much like Parmesan or Pecorino. It also stands out on a cheeseboard, paired with fruits, crackers, and crusty bread. It pairs well with crisp white wines, sparkling wines, or full-bodied red wines.
