Al pastor (Spanish for "shepherd style") is a popular culinary preparation of spit-grilled meat originating in Puebla, Mexico. It is most commonly associated with tacos, known as tacos al pastor.
Origins
The genesis of al pastor can be traced back to the Lebanese immigrants who arrived in Mexico, particularly in the city of Puebla, during the early 20th century. They brought with them their culinary tradition of shawarma (or doner kebab), which involves cooking marinated lamb or beef on a vertical rotisserie. Mexican cooks adapted this technique, substituting lamb with pork, and incorporating indigenous Mexican flavors and ingredients into the marinade and serving.
Preparation
The core of al pastor preparation involves thinly sliced pork, typically from the leg or shoulder, marinated in a blend of dried chilies (such as guajillo and ancho), achiote (for color and earthy flavor), spices (cumin, oregano, bay leaf), and pineapple.
The marinated pork is then stacked on a vertical spit, known as a trompo (Spanish for "spinning top"), which slowly rotates in front of a gas flame or electric heating element. A large piece of fresh pineapple is often placed on top of the stack, and sometimes an onion. As the outer layer of the pork cooks and crisps, thin slices are shaved off directly onto tortillas using a large knife. The heat of the trompo ensures the meat remains juicy inside while developing a slightly crispy exterior.
Serving
Tacos al pastor are traditionally served on small corn tortillas. The shaved pork is typically accompanied by finely diced fresh pineapple (often cut from the top of the trompo), chopped white onion, and cilantro. Various salsas, ranging from mild to very spicy, are common condiments, along with a squeeze of lime juice.
